This is the Ultimate Omelet Recipe coming from my grandpa himself! He owned a cafe in Bountiful, UT in the early 1960s where he would make breakfast and lunch for the local citizens! This omelet recipe comes from his time as a cafe owner. Although his time owning a cafe was short, he still has been making these omelets for 60+ years for his family! I am fortunate enough to have had the recipe passed down to me! Of course, our butter and cheese options will be coming from Cache Valley® Creamery! Some of the best quality you can acquire for cheese and butter in general! Combine that with quality eggs, you’ll have yourself one heck of a breakfast!

Method
- Prepare the Ingredients:
- Crack the 8 eggs into a large mixing bowl and whisk until fully combined. Season with a pinch of salt and pepper.
- Slice the green pepper, chop the sweet onion, and dice the ham.
- Add the sliced green pepper, chopped onion, and diced ham to the bowl with the eggs. Stir in the 1/4 cup each of Cache Valley® Creamery Mozzarella and Mild Cheddar Cheese. Mix well.
- Preheat the Electric Skillet:
- Set your electric skillet to 400°F (200°C) and let it preheat. Add 1-2 tablespoons of Cache Valley® Creamery Butter and allow it to melt or heat up.
- Cook the Omelet:
- Pour the egg mixture, which includes the vegetables, ham, and cheese, into the preheated skillet. Let it cook undisturbed for about 1-2 minutes until the edges begin to set.
- Gently lift the edges of the omelet with a spatula and tilt the skillet to allow any uncooked eggs to flow to the edges.
- Add the Cheese:
- Once the omelet is mostly set but still slightly runny on top, sprinkle the remaining 1/4 cup each of Cache Valley® Creamery Mozzarella and Mild Cheddar evenly over one half of the omelet.
- Fold and Finish Cooking:
- Carefully cut the omelet down the middle with a spatula. Roll both sides of the omelet towards the center, creating a cylindrical shape with the cheese inside.
- Close the electric skillet lid (if available) and let the rolled omelet cook for another 1-2 minutes, or until the cheese is melted and the omelet is fully cooked.
- Serve and Enjoy:
- Gently slide the rolled omelet onto a plate.
- Serve hot and enjoy the rich, cheesy flavors of your breakfast with Cache Valley® Creamery cheeses!
