I absolutely love the Ultimate Scotcheroo Recipe! It’s been a legacy in my wife’s family for years, which was a blessing enough for them to share with me! It took them years to even share it with me. They were probably worried I defile it somehow and put something horrible in the mix like raisens. Hahaha! Can you imagine the horror of that. But in all honestly, the texture, taste, and the way these scotcheroos from this recipe make me feel on the inside are indescribable and I want to share that with you! LOL! I also need to give a shout out to Lee’s Marketplace! They provided the top-notch ingredients for us to make these sweet things! And for that, I am thankful! Oh and side note, I love to get Guittard Milk Chocolate Chips for the chocolate in this recipe. It will give it the ultimate flavor! These are also the same chocolate chips that Crumbl Cookies use.


The Ultimate Scotcheroo Recipe
Equipment
- Stove
Ingredients
- 1 Cup Sugar
- 1 Cup Karo Corn Syrup
- 5-6 Cups Rice Crispies
- 1½ Cups Chocolate Chips I like Guittard the most
- 1½ Cups Butterscotch Chips
- 1 Cup Creamy Peanut Butter
Instructions
- On medium heat on the stove, pour in the karo syrup and sugar.
- Once boiling and the sugar has dissolved, pour in the peanut butter until it melts and then put in the rice crispies.
- Stir the mixture together and put in a 9"x13" pan and smooth it out porpotionately
- Put the chocolate and scotcheroo chips in a microwavable safe bowl and heat them in the microwave until they are melted enough to mix
- Stir and spread the gooey mixture over the top of the rice crispies. Let the chocolate cool and harden.
- Once hardened, ENJOY!
